The strawberry tree is perhaps the rarest and most valuable honey among those produced in Italy. The production area is Sardinia and the harvest takes place in late Autumn (October-November). The late season makes production particularly difficult, which is highly variable from year to year. Harvesting period: October-November Harvesting area: Sardinia Consistency: Crystallized Colour: From beige to dark hazelnut Aroma: Of coffee grounds, of bitter herbs Flavour: Of bitter herbs. Persistent and astringent. The organoleptic characteristics of strawberry tree honey undoubtedly make it unique. The taste is very bitter and this is precisely its main characteristic which makes it immediately recognizable and which has created the myth of the "bitter honey". Strawberry tree honey, by virtue of its bitter taste, is a honey for amateurs. In the kitchen it can be combined with bitter vegetables, by analogy (thistles, artichokes) or with sweet and fatty cheeses (by contrast). It is the perfect honey for coffee, the two bitters go well together without the honey invading the aroma of the drink.
